Bacon Wrapped Jalapenjos
Prep time: 20 minutes
10 medium to large Jalapenos
10 slices of bacon
1 package of 8 oz. Cream Cheese
Cut off the stems and cut a slice into the jalapeno on one side. Using a spoon, scrape out the veins and seeds from the inside of the jalapeno. The jalapeno should now be like a hollow bowl.
Stuff the cream cheese into the jalapenos, a spoonful should be enough. Make sure the cream cheese lasts for all the jalapenos. More cream cheese can be added later.
Wrap each jalapeno in bacon, skewering it with a toothpick to hold it in place.
On the grill or in a pan, sear the jalapenos until the bacon is cooked on all sides. the jalapenos will still be slightly crunchy.
If you want soft jalapenos, put in the oven for five minutes at a time on 350 until the jalapenos are at the desire softness.
Tip: For smaller bacon wrapped jalapenos or more in quantity, cut each jalapeno in half and follow the directions above.
